CROQUETTES BALLS BALLS .... snapper is always!



When the fish is of significant proportions, it is logical to assume and play with the cooking .. ... this is a favorite that is prepared with the portion of boiled fish that moves (not always happen though).
Usually the shape is that of the classic pancake made by the spoonful, this time I wanted to give a more attractive that makes you really look like nuggets or meatballs.



ingredients

a piece of boiled fish, about 200 gr. (In my case snapper)
2 eggs + 1 for the dough for bread
1 tablespoon pecorino romano cheese
about 2 grams of yeast
a sprig of parsley and marjoram 2 tablespoons chopped
flour or so (depends on the size of eggs)
salt pepper bread crumbs for breading
extra virgin olive oil for frying



crumble and release from all the fish bones




in a bowl that contains all then beat the eggs with crumbled yeast, cheese, flour, spices, salt and pepper, the mixture is fairly compact but esseree fluid, a batter short.
Cover and keep it warm (in the oven with courtesy light) for at least an hour




Add the fish to the batter and with wet hands and form into balls to be passed in the breadcrumbs, beaten egg
with a little 'salt and again in breadcrumbs.



fry them in olive oil and eaten hot (but are also good cold ..... if advance)


wonder if it is the last episode dedicated to the snapper .....
